The Use of Dual Cooking System

Here are several different ways to assemble your Kamado cooking system which will give you different results for your dishes.




Low Temperature Indirect Cooking Setup

Place the deflectors in the lowest position and the grid in the top or mid-position. Assemble it this way to prepare your Kamado for smoking or indirect cooking. Most suitable for 0-150 °C. Enjoy with ribs, pulled pork, shank, brisket, ham, duck.

 

High Temperature Indirect Cooking Setup

Place half-moon heat deflectors on the accessory rack, in the mid-position and the grates - in the highest position. Now your kamado is ready for indirect cooking at high temperatures - 150-400 °C. Enjoy with whole chicken, turkey, meat slices, whole fish, porchetta, meat rolls.


 

High Temperature Direct Cooking Setup

With the deflectors removed, the grate is in the top or mid-position. You are now ready to use your Kamado for direct cooking above the charcoals, to cook at high temperatures - 150-400 °C for under 20 minutes. Enjoy with beef or pork steaks, prawns, shashlik, sausages, pilaf and soups.


 


High Temperature Indirect Oven-Like Cooking Setup

Place the deflectors in the mid-position on the accessory rack. Place the grate in the top position and put the baking tray on top. This assembly can be used for indirect, oven-like cooking at high temperatures - 150-400 °C. Try cooking potato pudding, lasagna, tarts, pies, biscuits and bread.

 


Two-zone Direct and Indirect Cooking Setup

Remove one of the deflectors and place the grate in the top or mid-position. Now you can use your Kamado for simultaneous indirect and direct cooking when you want different dishes cooked at different temperatures. Try this setup with meat on the direct part and a side dish, like potatoes or vegetables on the indirect part.


 



Accessory Rack Setup

Feel like making a soup, stew, stir-fry or just want to experiment with your cast iron wok? Remove deflectors, the grate and place accessory tray in the top or mid-position.


 



Experiment and Adapt to Your Needs
